Sinclair Saratoga recently said farewell to their pop up kitchen Buddha Noodle, by chef Brady Duhame.

Yesterday Sinclair Saratoga welcomed their new Chef AJ Richards, of “Forged” a restaurant located in Hudson Falls, NY. Forged at Sinclair will be the original restaurants counterpart. Forged at Sinclair will feature a slightly smaller menu, however it will consist of some of the same dishes, and they will be made with the same quality, and fresh ingredients.

Chef Richards according to his bio on the Forged website has had no formal culinary training, yet worked his way from dishwasher to executive chef. The Syracuse native is a certified executive chef through the American culinary federation, as well as holds the treasurer position within the organization. AJ¬†returned home from Chicago after working under 3 michelin star chef Grant Achatz. Chef AJ is a member of the Albany chaine des rotisseurs, as well as a mondiale du vin member. He is also currently pursuing his aspirations to be a sommelier and has completed level one through the court of master sommeliers. He is already a level one cicerone. Richards is an award winning chef, named Albany Food and Wine’s Rising Star Chef in 2017, being the only chef to EVER score a perfect score on his tasting.

The menu for Forged at Sinclair will feature a myriad of small dishes including; blistered shishito peppers, lobster fritters, burrata, ahi tuna crudo and more…

The main menu will consist of a house burger, fried cat fish hoagie, as well as two unique salads.

Chef Richards felt it important to cater to the vegetarian, and vegan community, and curated several delectable dishes to meet their dietary restrictions. A pulled jack fruit sandwich is a unique option for vegan eaters. Smothered in whiskey barbeque sauce, some say it tastes reminiscent of a pulled pork sandwich. A vegan charcuterie board also graces the menu, and chef provides the option to make several vegetarian options vegan with a change of just a few ingredients. In addition to vegetarian, and vegan the menu also includes gluten free dishes! The menu can be easily decoded by a key provided.
